Pineapple Coconut Baked Oatmeal

2 cups rolled oats

1/2 cup shredded unsweetened coconut

1/2 cup brown sugar (or coconut sugar)

2 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

1 cup canned coconut milk

1/2 cup almond milk (or any milk of your choice)

2 large eggs, beaten

1 tsp vanilla extract

1 cup fresh pineapple chunks (or canned, drained)

1/4 cup chopped walnuts or pecans (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with a little coconut oil or non-stick spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, brown sugar, baking powder, salt, and cinnamon. Stir until well mixed.

      Prepare Wet Ingredients: In another bowl, whisk together the coconut milk, almond milk, beaten eggs, and vanilla extract until fully combined.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until all the oats are coated. Gently fold in the fresh pineapple chunks and walnuts or pecans if using.

          Transfer to Baking Dish: Pour the oatmeal mixture into the greased baking dish, spreading evenly.

            Bake: Bake in the preheated oven for 30-35 minutes or until the edges are golden and the center is set. A toothpick inserted into the center should come out clean.

              Cool and Serve: Allow to cool for about 5 minutes before slicing into squares. Serve warm, garnished with fresh mint leaves if desired, and drizzled with extra coconut milk or a dollop of yogurt on top for added creaminess.
