2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Prepare the Steak: Begin by patting the steak cubes dry with paper towels to ensure a good sear. Season them generously with salt and black pepper.

    Heat the Skillet: In a large skillet or cast-iron pan, heat the olive oil over medium-high heat until shimmering.

      Sear the Steak: Add the steak bites to the hot skillet in a single layer, ensuring not to overcrowd the pan. Sear the steak for about 2-3 minutes on each side, or until they develop a nice brown crust and reach your desired doneness (medium-rare typically takes around 5-6 minutes total).

        Make the Garlic Butter: Once the steak bites are seared, reduce the heat to medium-low. Add the butter to the skillet and let it melt. Once melted, stir in the minced garlic, rosemary, thyme, and lemon zest. Cook for another 1-2 minutes, until the garlic is fragrant and golden.

          Coat the Steak Bites: Remove the skillet from heat and pour the garlic butter mixture over the steak bites, tossing them gently to coat completely.
