Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cookie removal.

    Make the Cookie Dough: In a large mixing bowl, combine the creamy peanut butter and granulated sugar. Mix until smooth and fluffy. Add the egg and vanilla extract, and continue mixing until well combined. Then, stir in the baking soda and a pinch of salt. The dough will be thick, so mix well.

      Form the Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with the back of a fork to create a crisscross pattern.
