2 ripe peaches, peeled and diced

1 ½ cups Greek yogurt (plain or vanilla)

¼ cup honey (adjust to taste)

1 teaspoon vanilla extract

½ cup almond milk (or any milk of your choice)

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Peaches: Start by peeling the ripe peaches and removing the pits. Dice them into small pieces and set aside.

    Blend the Mixture: In a blender, combine the diced peaches, Greek yogurt, honey, vanilla extract, almond milk, and a pinch of salt. Blend until smooth. You can leave a few small peach chunks for added texture if you like!

      Taste Test: Take a moment to taste the mixture. If you prefer it sweeter, add more honey and blend again until combined.

        Fill the Molds: Pour the peach yogurt mixture evenly into popsicle molds, leaving a little space at the top for expansion. If you have any extra diced peaches, you can sprinkle some on the top of each mold for a fun visual effect.

          Insert Sticks: If your molds come with sticks, insert them into the center of each filled mold. If using regular molds, you can cover the tops with foil and insert the sticks through the foil to hold them in place.

            Freeze: Place the filled molds in the freezer and allow them to freeze for at least 4-6 hours or until completely solid.

              Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Carefully pull the popsicles out. If desired, garnish with fresh mint leaves for a refreshing touch.
