Ingredients

2 ripe peaches, sliced

1 cup broccoli florets

1 red bell pepper, julienned

1 medium carrot, thinly sliced

1 cup sugar snap peas

3 green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sweet chili sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

Sesame seeds for garnish

Salt and pepper to taste

Cooked rice or quinoa for serving (optional)

Instructions

Prep the Ingredients: Start by washing and slicing all your veggies and peaches. Having everything ready will make your stir fry process smoother.

Heat the Oil: In a large wok or frying pan, heat the vegetable oil over medium-high heat until it shimmers.

Sauté the Aromatics: Add the minced garlic and grated ginger to the hot oil. Stir-fry for about 30 seconds until fragrant, making sure not to burn them.

Add the Vegetables: Toss in the broccoli florets, red bell pepper, carrots, and sugar snap peas. Stir-fry for approximately 3-5 minutes, or until the vegetables start to become tender but still crisp.

Incorporate Peaches: Gently fold in the sliced peaches, letting their juices mingle with the veggies for about 2 minutes.

Season the Stir Fry: Drizzle the soy sauce and sweet chili sauce over the stir fry, and stir to coat all the vegetables evenly. Adjust seasoning with salt and pepper as desired.

Finish Up: Add the sesame oil and chopped green onions. Toss everything together for another minute, letting the flavors combine before removing from heat.

Serve: Spoon the stir fry onto plates or bowls over cooked rice or quinoa if desired. Sprinkle sesame seeds on top for an extra crunch.
