2 ripe peaches, sliced

1 cup bell peppers (red and yellow), thinly sliced

1 cup snap peas, trimmed

1 medium red onion, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

2 tablespoons vegetable oil (like canola or sunflower)

Salt and pepper to taste

1 tablespoon sesame seeds (for garnish)

Fresh cilantro leaves for garnish (optional)

Instructions
 

Prepare the Ingredients: Wash and slice the peaches, bell peppers, and onion. Trim the snap peas and mince the garlic and ginger. Set all ingredients aside for quick access.

    Make the Stir Fry Sauce: In a small bowl, mix together the soy sauce, honey (or maple syrup), and sesame oil. Stir well to combine and set aside.

      Heat the Pan: In a large wok or skillet, heat the vegetable oil over medium-high heat. Ensure the oil is hot but not smoking.

        Cook the Aromatics: Add the sliced red onion and sauté for 2-3 minutes until it begins to soften. Then, add the minced garlic and grated ginger, cooking for another minute until fragrant.

          Add Vegetables: Stir in the bell peppers and snap peas. Cook for about 4-5 minutes, stirring frequently, until the vegetables are tender-crisp.

            Incorporate Peaches: Gently fold the sliced peaches into the stir-fry and cook for an additional 2 minutes to heat through and allow the natural juices to release.

              Pour Sauce & Toss: Drizzle the stir-fry sauce over the mixture and toss everything together until evenly coated. Allow the stir fry to cook for another minute, so the flavors meld.

                Finish & Serve: Season with salt and pepper to taste. Remove from heat and garnish with sesame seeds and fresh cilantro if desired. Serve immediately over rice or noodles.
