Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

16 oz cream cheese, softened

¾ cup granulated sugar (for filling)

1 teaspoon vanilla extract

3 large eggs

1 cup heavy cream

2 cups fresh peaches, peeled and diced

2 tablespoons cornstarch

1 tablespoon lemon juice

Pinch of salt

Instructions

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix well until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9x13-inch baking dish to form a crust. Bake for 10 minutes, then remove and set aside to cool slightly.

Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with ¾ cup of sugar until smooth and creamy. Add in the vanilla extract and mix well. Add the eggs one at a time, beating thoroughly after each addition. Finally, pour in the heavy cream and mix until everything is well combined.

Prepare the peach topping: In a separate bowl, toss the diced peaches with cornstarch, lemon juice, and a pinch of salt. This will help to thicken the peach mixture as it bakes and prevent it from being too watery.

Assemble the cheesecake bars: Pour half of the cheesecake filling over the cooled crust. Drop spoonfuls of the peach mixture evenly over this layer. Pour the remaining cheesecake batter over the peaches, spreading it gently to ensure the peaches are distributed throughout.

Bake the bars: Place the assembled cheesecake bars in the preheated oven and bake for 35-40 minutes, or until the edges are set and the center has a slight jiggle. Keep an eye on the edges to avoid over-browning.

Cool and chill: Once baked, remove the cheesecake bars from the oven and let them cool at room temperature for about 30 minutes. Then, refrigerate them for at least 4 hours or overnight for the best flavor and texture.

Slice and serve: Once fully chilled, use a sharp knife to cut the cheesecake into bars. Serve chilled, and enjoy the creamy, fruity deliciousness of your Peach Cream Cheesecake Bars!
