Ingredients

2 ripe peaches, sliced

1 ball of fresh burrata cheese (about 8 oz)

4 slices of crusty bread (like sourdough or ciabatta)

2 tablespoons of extra virgin olive oil

1 tablespoon of honey (optional)

1 tablespoon of balsamic glaze

Fresh basil leaves, for garnish

Sea salt and freshly cracked black pepper, to taste

Instructions

Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the slices of bread on a baking sheet and brush each side with olive oil. Toast in the oven for about 8-10 minutes or until golden brown and crispy. You can also grill the bread for a smokier flavor.

Prepare the Peaches: While the bread is toasting, wash and slice the peaches into thin wedges. If desired, you can lightly grill or caramelize the peaches in a pan for a minute to enhance their sweetness.

Assemble the Toast: Once the bread is toasted, remove it from the oven. Place a generous portion of burrata on each slice of toast, allowing it to be creamy and oozy.

Add the Peaches: Arrange the sliced peaches on top of the burrata. Drizzle a little olive oil over the peaches and season with sea salt and freshly cracked black pepper to taste.

Finish with Sweetness and Freshness: Drizzle honey over the peaches for a touch of sweetness, if using. Then add a drizzle of balsamic glaze to introduce a tangy contrast. Top with fresh basil leaves for an aromatic touch.

Serve Immediately: Place the toast on a serving platter and enjoy immediately while the bread is still warm and crispy.
