Peach BBQ Cauliflower Wings

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup unsweetened almond milk (or any milk of your choice)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

2 cups breadcrumbs (panko for extra crunch)

For the Peach BBQ Sauce:

1 cup ripe peaches, chopped (fresh or canned)

1/2 cup ketchup

1/4 cup apple cider vinegar

2 tablespoons brown sugar

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon yellow mustard

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

Prepare the Cauliflower: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. In a large bowl, combine flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth. Dredge each cauliflower floret in the batter, ensuring they're well-coated.

    Bread the Cauliflower: Roll the batter-coated florets in breadcrumbs until fully covered. Place them on the prepared baking sheet, making sure they are spaced apart for even cooking.

      Bake the Wings: Bake the cauliflower in the preheated oven for 25-30 minutes, turning halfway through, until golden brown and crispy.
