Ingredients

2 ripe peaches, diced

1 ripe avocado, diced

1 small red onion, finely chopped

1 jalapeño pepper, seeded and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Optional: 1/2 cup diced tomatoes for added freshness

Instructions

Start by preparing the peaches and avocados. Dice them into small, even pieces to ensure a balanced mix.

Finely chop the red onion and jalapeño pepper. If you prefer a milder salsa, remove the seeds and membranes from the jalapeño before mincing.

In a medium-sized mixing bowl, combine the diced peaches, avocado, red onion, and jalapeño.

Add the chopped cilantro to the bowl, which will enhance the salsa's flavor with its fresh aroma.

Squeeze the juice of one lime over the mixture. This not only adds flavor but also helps keep the avocado from browning.

Season with salt and pepper to taste. If you've opted to include tomatoes, fold them in gently to avoid bruising.

Mix all the ingredients carefully to combine, without mashing the avocado. Taste and adjust seasoning if necessary.

Cover with plastic wrap or transfer to an airtight container, and let it chill in the refrigerator for about 30 minutes to allow the flavors to meld.

Serve with tortilla chips, grilled chicken, or as a topping for fish tacos!
