4 medium zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

1 cup spinach, chopped

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini Noodles: Using a clean kitchen towel, gently squeeze the spiralized zucchini noodles to remove excess moisture. This prevents the dish from becoming watery.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the cherry tomatoes and chopped spinach, cooking for another 3-4 minutes until the tomatoes soften and the spinach wilts. Season with salt, pepper, Italian seasoning, and red pepper flakes if using.

        Combine Ingredients: In a large mixing bowl, combine the sautéed vegetables with the zucchini noodles. Sprinkle half of the Parmesan and mozzarella cheeses into the mixture, folding everything together until well combined.
