Parmesan Tomato Zucchini Bake

4 medium zucchinis, sliced into 1/4-inch rounds

3 cups cherry tomatoes, halved

1 1/2 cups grated Parmesan cheese

1 cup shredded mozzarella cheese

4 cloves garlic, minced

1/4 cup olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or a little olive oil.

    Prepare Zucchini: In a large bowl, combine the sliced zucchini, olive oil, minced garlic, dried oregano, and dried basil. Season with salt and pepper, tossing until the zucchini is well-coated.

      Layer Vegetables: Begin layering the zucchini slices evenly on the bottom of the prepared baking dish. Follow this with a layer of half the halved cherry tomatoes.

        Cheese It Up: Sprinkle half of the grated Parmesan cheese evenly over the vegetables, followed by half of the mozzarella cheese.

          Add Remaining Layers: Repeat the layering process with the remaining zucchini, cherry tomatoes, and top with the rest of the Parmesan and mozzarella cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown and the zucchini is tender.

              Garnish and Serve: Once out of the oven, let the bake cool for a few minutes. Garnish with fresh basil leaves before serving.
