Parmesan Spinach Stuffed Mushrooms

20 large portobello or cremini mushrooms

2 cups fresh spinach, chopped

1 cup fresh ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup cream cheese, softened

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1/4 cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the mushrooms: Clean the mushrooms with a damp cloth and carefully remove the stems, making sure not to break the caps. Finely chop the stems and set aside.

      Sauté the spinach: In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and chopped mushroom stems, sautéing for about 2-3 minutes until softened. Add the chopped spinach and cook until wilted, about 2 more minutes. Season with salt, pepper, and red pepper flakes (if using). Remove from heat and let cool slightly.

        Make the filling: In a large mixing bowl, combine the ricotta cheese, cream cheese, grated Parmesan cheese, lemon juice, and the sautéed spinach mixture. Mix until all ingredients are well combined.

          Stuff the mushrooms: Using a spoon, generously fill each mushroom cap with the cheese and spinach mixture, packing it tightly.

            Prepare for baking: Place the stuffed mushrooms on a baking sheet lined with parchment paper. Sprinkle the tops with breadcrumbs for added crunch.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.

                Garnish and serve: Remove from the oven and let cool slightly. Garnish with freshly chopped parsley before serving.
