Oven Roasted Garlic Tomato Soup

2 lbs ripe tomatoes, quartered

1 head of garlic, top sliced off

1 medium onion, diced

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

1 teaspoon dried oregano

4 cups vegetable broth (or chicken broth)

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Crème fraîche or heavy cream, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tomatoes and Garlic: On a large baking sheet, spread the quartered tomatoes and place the head of garlic (cut side up) in the center. Drizzle with olive oil and season with salt, pepper, dried basil, and oregano. Toss the tomatoes gently to ensure they are well coated.

      Roast the Vegetables: Roast in the preheated oven for about 25-30 minutes until the tomatoes are caramelized and blistered, and the garlic is soft and fragrant.

        Sauté the Onions: While the tomatoes and garlic are roasting, heat a large pot over medium heat. Add a splash of olive oil, then sauté the diced onion until translucent and tender, about 5-7 minutes.

          Combine Ingredients: Once the tomatoes and garlic are done roasting, transfer them to the pot with the sautéed onions. Squeeze the roasted garlic cloves out of their skins and add them to the pot. Pour in the vegetable broth and stir to combine.

            Simmer and Blend: Bring the mixture to a gentle simmer and let it cook for an additional 10 minutes to meld the flavors. Use an immersion blender (or a traditional blender, in batches) to purée the soup until it reaches your desired consistency.

              Add Balsamic Vinegar: Stir in the balsamic vinegar, adjusting the seasoning if necessary with more salt and pepper.

                Serve: Ladle the soup into bowls, garnishing with fresh basil leaves and a drizzle of crème fraîche or heavy cream if desired.
