1 lb chicken breast tenders

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 tablespoon Dijon mustard

Olive oil spray (or any cooking spray)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.

    Prepare the Breadings: In a medium bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, dried Italian herbs, salt, and pepper. Mix well to ensure the dry ingredients are evenly distributed.

      Prepare the Chicken: In another bowl, whisk together the eggs and Dijon mustard until well combined. This will act as a binding agent for the breadcrumbs.

        Coat the Chicken: Dip each chicken tender first into the egg mixture, allowing any excess to drip off. Then, coat the tender in the breadcrumb mixture, pressing gently to ensure the crumbs adhere well. Place the coated tenders on the prepared baking sheet.
