Ingredients

24 Oreo cookies (plus extra for topping)

1/4 cup unsalted butter, melted

16 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1/4 cup sour cream

1/4 cup heavy cream

1/4 teaspoon salt

Instructions

Preheat the Oven: Preheat your oven to 325°F (163°C) and line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal.

Prepare the Crust: In a food processor, crush 24 Oreo cookies until fine crumbs form. In a bowl, combine the crumbs with the melted butter and mix well until the mixture resembles wet sand. Press the mixture firmly into the bottom of the prepared pan to form an even layer. Bake in the preheated oven for 10 minutes.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer on medium speed until smooth and creamy. Add the granulated sugar and vanilla extract, mixing until well combined.

Add Eggs and Cream: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then mix in the sour cream, heavy cream, and salt until the batter is smooth and creamy.

Incorporate Oreo Pieces: Chop a few additional Oreo cookies into small chunks and fold them into the cheesecake batter.

Bake the Cheesecake Bars: Pour the cheesecake batter over the baked crust, smoothing it out evenly. Bake for 30-35 minutes or until the edges are set and the center has a slight jiggle.

Cool Down: Let the cheesecake cool at room temperature for about an hour, then refrigerate for at least 4 hours (preferably overnight) to fully set.

Prepare for Serving: Once chilled and set, lift the cheesecake out of the pan using the parchment paper overhang. Cut into bars, and top with additional crushed Oreos if desired.

Serve: Enjoy your Oreo Cheesecake Bars chilled, and share the deliciousness with friends and family!
