Orange Glazed Tofu Stir-Fry

Ingredients
  

14 oz firm tofu, pressed and cubed

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas, trimmed

3 green onions, chopped

2 cloves garlic, minced

1 inch ginger, minced

¼ cup soy sauce

¼ cup fresh orange juice

Zest of 1 orange

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon sesame oil

Toasted sesame seeds and fresh cilantro for garnish

Instructions
 

Begin by pressing the tofu for at least 15 minutes to remove excess moisture. After pressing, cut the tofu into bite-sized cubes.

    Toss the tofu cubes in cornstarch until they are evenly coated. This will give them a crispy texture when cooked.

      Heat 1 tablespoon of vegetable oil in a large non-stick pan or wok over medium-high heat. Add the tofu cubes and cook until golden brown and crispy, about 4-5 minutes. Stir occasionally to ensure even cooking. Once done, remove the tofu and set aside.

        In the same pan, add the remaining tablespoon of vegetable oil. Sauté the garlic and ginger for about 30 seconds until fragrant.

          Add the sliced red and yellow bell peppers and snap peas to the pan. Stir-fry the vegetables for about 3-4 minutes until they are just tender but still crisp.

            While the vegetables are stir-frying, prepare the orange glaze. In a separate bowl, whisk together the soy sauce, fresh orange juice, orange zest, honey or maple syrup, rice vinegar, and sesame oil until well combined.

              Add the crispy tofu back to the pan with the stir-fried vegetables. Pour the orange glaze over the mixture, stirring well to ensure everything is coated. Cook for an additional 2-3 minutes until the sauce is slightly thickened and heated through.

                Finally, toss in the chopped green onions and mix well. Remove from heat and garnish with toasted sesame seeds and fresh cilantro.

                  Serve the orange glazed tofu stir-fry over rice or noodles, and enjoy this vibrant, flavorful dish!
