8 oz (225g) pasta of your choice (farfalle, penne, or fusilli recommended)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

10 oz (280g) mushrooms, sliced (cremini or button)

4 cups fresh spinach

1 cup vegetable broth

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

1 teaspoon dried thyme

½ teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)
