1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup long-grain rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

2 cups vegetable broth or water

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and black pepper to taste

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese (optional)

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for heat)

Instructions
 

Sauté the Aromatics: In a large pot over medium heat, add the olive oil. Once heated, add the diced onion and sauté for about 3-4 minutes until translucent. Stir in minced garlic and diced red bell pepper, cooking for an additional 2 minutes.

    Add the Rice: Pour in the long-grain rice, stirring to coat it with the oils and aromatics. Toast the rice lightly for about 2 minutes, allowing it to absorb the flavors.

      Combine Remaining Ingredients: Add the black beans, diced tomatoes with green chilies (including juices), and vegetable broth to the pot. Sprinkle in the cumin, chili powder, smoked paprika, and season with salt and black pepper. Stir well to combine.

        Cook the Rice: Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes for white rice, or 35-40 minutes for brown rice, until the rice is tender and liquid is absorbed.

          Add Corn and Cheese: When the rice is done, remove the pot from heat and stir in the corn. If desired, sprinkle shredded cheddar cheese over the top, cover, and let it sit for 5 minutes to melt.
