12 oz spaghetti

4 cups vegetable broth

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, roughly chopped

1 lemon (zested and juiced)

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

¼ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tablespoons olive oil

In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-5 minutes.

    Add the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until fragrant but not burnt.

      Pour in the vegetable broth and bring it to a gentle simmer.

        Add the spaghetti to the pot, ensuring it is submerged in the broth. Stir occasionally, cooking for about 10-12 minutes until the pasta is al dente.

          Stir in the halved cherry tomatoes, lemon zest, lemon juice, and chopped basil. Cook for another 2-3 minutes until the tomatoes are warmed through and the basil has wilted slightly.

            Season the pasta with salt and pepper to taste and sprinkle with grated Parmesan cheese (or nutritional yeast).

              Remove from the heat, give everything a good stir, and let it sit for a couple of minutes to thicken up.
