Ingredients

8 oz elbow macaroni

2 cups vegetable broth

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup frozen peas (optional)

1/4 cup breadcrumbs (optional, for topping)

Fresh parsley for garnish (optional)

Instructions

Combine Ingredients: In a large pot, add the elbow macaroni, vegetable broth, and whole milk. Stir to combine.

Cook Pasta: Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to medium-low, cover, and simmer for about 8-10 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.

Add Cheese: Remove the pot from heat and stir in the cheddar cheese, mozzarella cheese, and Parmesan cheese until melted and creamy.

Season: Add garlic powder, onion powder, smoked paprika, salt, and pepper to taste. Stir until everything is well incorporated. If using, fold in the frozen peas for an extra pop of color and nutrition.

Optional Topping: If you’d like a crispy topping, preheat your oven to broil. Transfer the mac and cheese to a baking dish, sprinkle with breadcrumbs, and broil for 2-3 minutes or until the top is golden brown and crispy.

Serve: Garnish with fresh parsley if desired, and serve warm in lunch containers for a delicious school meal!
