12 oz pasta (penne or fusilli work great)

1 cup canned pumpkin puree (not pumpkin pie filling)

1 small onion, diced

3 cloves garlic, minced

2 cups vegetable broth

1 cup heavy cream (or coconut milk for a lighter version)

1 tsp dried sage (or 1 tbsp fresh sage, chopped)

1/2 tsp nutmeg

1/2 tsp salt (to taste)

1/4 tsp black pepper

1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tbsp olive oil

Fresh sage leaves for garnish (optional)

Toasted pumpkin seeds for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot or deep skillet, heat olive oil over medium heat. Add diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Pumpkin: Stir in the pumpkin puree, dried sage, nutmeg, salt, and black pepper. Cook for 2-3 minutes allowing the flavors to meld together.

      Add Pasta & Broth: Pour in the vegetable broth and bring the mixture to a gentle boil. Once boiling, add the pasta and reduce the heat to medium-low. Stir well to prevent sticking.

        Cook Pasta: Cover and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid. Add more broth if necessary to ensure the pasta doesn’t stick.

          Incorporate Cream: Once pasta is cooked, reduce heat further and stir in the heavy cream. Mix well to create a rich and creamy sauce.
