12 oz (340g) uncooked pasta (cavatappi or rotini works well)

2 medium yellow onions, thinly sliced

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon sugar (to help caramelize onions)

1 tablespoon balsamic vinegar

4 cups low-sodium vegetable or beef broth

1 cup grated Gruyère cheese

½ cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Caramelize the Onions: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook for about 10-15 minutes, stirring occasionally, until the onions are soft and golden brown. Add the sugar after 5 minutes to enhance the caramelization process.
