One-Pot Cheesy Taco Pasta

1 pound ground beef (or turkey for a lighter option)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

2 cups pasta (penne or elbow macaroni work well)

1 can (15 oz) diced tomatoes, undrained

2 cups beef broth (or chicken broth)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Lime wedges (for serving, optional)

Instructions
 

Sauté the Base: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and sauté for another minute until fragrant.

    Brown the Meat: Add the ground beef (or turkey) to the pot. Cook, breaking it up with a spatula, until browned and cooked through, about 6-8 minutes. Drain any excess fat if necessary.

      Season: Sprinkle the taco seasoning over the meat and mix well to ensure the meat is evenly coated.

        Add Pasta & Liquids: Stir in the pasta, diced tomatoes (with their juice), and beef broth. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 10-12 minutes, or until the pasta is al dente and has absorbed most of the liquid, stirring occasionally.

          Mix in Beans & Corn: Once the pasta is cooked, stir in the black beans and corn. Mix until heated through.

            Add the Cheese: Remove the pot from heat and sprinkle the shredded cheddar and Monterey Jack cheeses over the top. Stir until the cheese melts and is creamy throughout the pasta.

              Garnish & Serve: Top with chopped cilantro. Serve hot, with a dollop of sour cream and lime wedges on the side if desired.
