Ingredients

1 lb (450g) ground beef

2 cups broccoli florets (fresh or frozen)

8 oz (225g) pasta (your choice – penne, rotini, or macaroni)

4 cups beef broth

2 cups shredded sharp cheddar cheese

1 cup milk

1 small onion, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnishing)

Instructions

Sauté the Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes). Add the ground beef, break it apart with a spoon, and cook until browned (about 5-7 minutes). Season with salt, pepper, Italian seasoning, and red pepper flakes if using.

Add Broth and Pasta: Once the beef is cooked, pour in the beef broth and bring it to a boil. Add the uncooked pasta to the pot, stirring well to combine. Reduce the heat to medium-low and cover, letting it simmer for about 10-12 minutes, or until the pasta is fully cooked and has absorbed most of the liquid.

Incorporate Broccoli: Stir in the broccoli florets. Cover the pot and cook for an additional 5 minutes, or until the broccoli is tender.

Creamy Cheese Sauce: Remove the pot from the heat. Pour in the milk and gradually add the shredded cheddar cheese, stirring constantly until everything is melted and creamy. Adjust seasoning as needed.

Serve and Garnish: Spoon the cheesy beef and broccoli pasta into bowls. Garnish with freshly chopped parsley for a touch of color and freshness. Enjoy your delicious one-pot meal!
