One-Pot Beef Stroganoff

1 lb (450g) beef sirloin, thinly sliced

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced

2 tbsp olive oil

1 tbsp Worcestershire sauce

2 cups beef broth

1 cup egg noodles (or pasta of your choice)

1 cup sour cream

1 tsp Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the sliced beef sirloin and cook until browned on all sides (about 3-5 minutes). Remove the beef from the pot and set aside.

    Sauté Vegetables: In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent. Add the sliced mushrooms and cook for an additional 5-7 minutes, until they are tender and have released their moisture.

      Combine Ingredients: Return the browned beef to the pot with the mushrooms and onions. Stir in the Worcestershire sauce, beef broth, and Dijon mustard. Bring the mixture to a boil.

        Cook the Noodles: Add the egg noodles to the pot. Reduce the heat to a simmer, cover, and cook for 8-10 minutes, or until the noodles are tender and have absorbed some of the broth.

          Add the Creaminess: Once the noodles are cooked, reduce the heat to low. Stir in the sour cream, and mix well until fully combined. Season with salt and pepper to taste. Allow to warm through for another 2-3 minutes.

            Garnish and Serve: Remove from heat, and sprinkle with fresh chopped parsley before serving. Enjoy your creamy one-pot beef stroganoff!
