1 tablespoon olive oil

3 cloves garlic, minced

1 onion, diced

1 red bell pepper, diced

1 can (14 oz) diced tomatoes, with juices

1 cup vegetable or chicken broth

1 package (9 oz) cheese tortellini (fresh or frozen)

1 cup heavy cream

1 cup baby spinach

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Sauté Aromatics: In a large skillet or pan, heat the olive oil over medium heat. Add the minced garlic and diced onion, and sauté for about 2-3 minutes, or until the onion becomes translucent.

    Add Bell Pepper & Tomatoes: Stir in the diced red bell pepper and cook for an additional 3-4 minutes. Pour in the diced tomatoes (with juices) and vegetable or chicken broth, bringing the mixture to a gentle simmer.

      Cook Tortellini: Once simmering, add the tortellini to the pan. Stir well and let it cook according to the package instructions, usually about 5-7 minutes, until the tortellini is tender.
