One-Pan Lemon Garlic Shrimp and Rice

1 lb (450g) large shrimp, peeled and deveined

1 cup jasmine rice, rinsed

3 cups low-sodium chicken broth

4 cloves garlic, minced

1 medium onion, diced

1 cup frozen peas

1 lemon (zested and juiced)

3 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prep the Shrimp: In a bowl, toss the shrimp with olive oil, lemon juice, smoked paprika, salt, and pepper. Let it marinate for about 15 minutes while you prepare the other ingredients.

    Sauté the Aromatics: In a large skillet or pan over medium heat, add 2 tablespoons of olive oil. Once hot, add the diced onion and sauté for 3-4 minutes until translucent. Then, add the minced garlic and red pepper flakes (if using), cooking for an additional 1-2 minutes until fragrant.

      Toast the Rice: Add the rinsed jasmine rice to the pan, stirring to combine it with the onion and garlic mixture. Toast the rice for about 2 minutes, allowing the flavors to meld.

        Cook the Rice: Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes. Avoid removing the lid during cooking to retain steam.

          Add the Shrimp and Peas: After 15 minutes, lift the lid and gently stir the rice. Add the marinated shrimp and frozen peas on top of the rice. Cover again and cook for another 5-7 minutes, or until the shrimp are opaque and cooked through.
