4 boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, diced

4 cloves garlic, minced

1 lemon (juice and zest)

1 teaspoon dried oregano

1/2 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

2 tablespoons olive oil

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a bowl, combine the juice and zest of the lemon, minced garlic, oregano, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Marinate for at least 30 minutes (or overnight in the fridge for more flavor).

    Sauté the Aromatics: In a large, deep skillet or pan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

      Cook the Chicken: Push the onions to the side of the pan and add the marinated chicken thighs. Sear on both sides until golden brown, about 5 minutes per side. Remove the chicken from the pan and set aside temporarily.

        Prepare the Rice: In the same pan, add the rice, stirring to coat it with the remaining oil and juices. Toast the rice for about 2 minutes until it’s slightly translucent.

          Add Broth and Chicken: Pour in the chicken broth, scraping the bottom of the pan to deglaze. Place the chicken thighs back into the pan, ensuring they are nestled into the rice.
