One-Pan Honey BBQ Chicken Rice

1.5 lbs boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1 cup barbecue sauce (your favorite brand)

2 tablespoons honey

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup frozen mixed vegetables (peas, carrots, corn)

Fresh parsley, chopped (for garnish)

Prep the Chicken: In a large mixing bowl, combine the barbecue sauce, honey, smoked paprika, salt, and black pepper. Add the chicken thighs and toss well to coat. Allow to marinate for at least 15 minutes for flavor infusion (optional).

    Sauté Aromatics: Heat the olive oil in a large, deep skillet or sauté pan over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

      Brown the Chicken: Push the onion and garlic mixture to the side of the pan and add the marinated chicken thighs. Brown the chicken on both sides for about 5-7 minutes, allowing the barbecue sauce to caramelize slightly.

        Add Rice and Broth: Once the chicken is browned, add the rice to the pan, stirring it into the onion and garlic mixture. Pour in the chicken broth and bring it to a gentle boil.

          Simmer it All Together: Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes. After 10 minutes, carefully add the frozen mixed vegetables on top without stirring. This allows the rice to cook and absorb all the flavors while steaming the vegetables.

            Check for Doneness: After 20 minutes, remove the lid and check if the rice is tender and all the liquid is absorbed. If needed, you can cover and cook for an additional 5 minutes.

              Serve: Fluff the rice with a fork, then slice the chicken into bite-sized pieces and mix it through the rice. Garnish with fresh chopped parsley before serving for added freshness.
