4 boneless, skinless chicken thighs

1 cup button mushrooms, sliced

1 cup cremini mushrooms, sliced

5 cloves garlic, minced

1 medium onion, finely chopped

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1/2 cup chicken broth

1/4 cup heavy cream

Fresh parsley, chopped (for garnish)

Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken thighs with salt, pepper, thyme, and rosemary. Once the oil is hot, add the chicken thighs and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the butter. Once melted, add the chopped onion and sauté for about 3 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

      Cook the Mushrooms: Add the sliced button and cremini mushrooms to the skillet. Stir well and cook for about 5-7 minutes until the mushrooms are tender and their moisture has evaporated.

        Deglaze the Pan: Pour in the chicken broth, scraping the bottom of the pan to free any stuck bits, which adds great flavor. Bring it to a gentle simmer.
