Ingredients

1 lb (450g) large shrimp, peeled and deveined

1 bunch fresh asparagus, trimmed and cut into 2-inch pieces

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Optional: ½ teaspoon red pepper flakes (for a spicy kick)

Instructions

Prepare the Shrimp: Start by patting the shrimp dry with paper towels. This will help them sear nicely. Season them with salt, pepper, smoked paprika, and lemon zest.

Heat the Pan: In a large skillet, melt 2 tablespoons of butter over medium heat. Allow it to become bubbly but avoid burning.

Sauté the Asparagus: Add the asparagus pieces to the skillet and sauté for about 3-4 minutes until they start to become tender but still crisp. Season with a little salt and pepper. Remove the asparagus from the pan and set aside.

Cook the Shrimp: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic, stirring for about 30 seconds until fragrant. Then, add the seasoned shrimp in a single layer. Cook for about 2-3 minutes on one side until they turn pink, then flip them over and cook the other side for another 1-2 minutes.

Combine and Finish: Return the sautéed asparagus to the skillet with the shrimp. Add the lemon juice and red pepper flakes (if using) to the pan, stirring to combine everything evenly. Cook for an additional minute until everything is heated through and well mixed.

Serve: Remove from heat, garnish with fresh parsley, and serve immediately. Enjoy with crusty bread or over a bed of rice or quinoa to soak up the delicious garlic butter sauce!
