1 lb boneless, skinless chicken breasts, diced

1 cup uncooked white rice

2 cups broccoli florets (fresh or frozen)

1 medium onion, diced

3 cloves garlic, minced

3 cups chicken broth

1 ½ cups shredded cheddar cheese

1 tsp smoked paprika

1 tsp dried thyme

1 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts, season with salt, pepper, and smoked paprika. Cook until lightly browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Cook the Aromatics: In the same skillet, add the diced onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

      Add Rice and Broth: Stir in the uncooked rice, then pour in the chicken broth. Scrape the bottom of the pan to release any flavorful bits stuck to it. Bring the mixture to a boil.

        Combine Chicken and Broccoli: Once boiling, reduce the heat to low and add the sautéed chicken and broccoli florets. Stir to combine, and cover the skillet with a lid.

          Simmer: Let everything simmer on low heat for about 15-20 minutes, or until the rice is cooked and has absorbed all the liquid. Make sure to check occasionally to ensure the rice doesn’t stick to the bottom of the pan. If necessary, add a splash more broth or water.

            Add Cheese: Once the rice is cooked, remove the skillet from heat and sprinkle the shredded cheddar cheese over the top. Cover again and let it sit for about 5 minutes, until the cheese melts.
