1 cup quinoa, rinsed and drained

2 cups vegetable broth (or water)

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup milk (or plant-based milk)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

1 teaspoon paprika (optional for added flavor)

1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then cover and reduce the heat to low. Let it simmer for about 15 minutes, or until liquid is absorbed and quinoa is fluffy. Remove from heat and let it sit covered for an additional 5 minutes.

      Prepare Broccoli: While the quinoa is cooking, steam the broccoli florets for about 3-4 minutes until they are bright green and slightly tender. Set aside.

        Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, steamed broccoli, olive oil, garlic powder, onion powder, salt, pepper, and paprika. Mix until well combined.

          Mix in Cheeses: Stir in the shredded cheddar cheese, grated Parmesan cheese, and milk into the quinoa-broccoli mixture. Make sure everything is evenly mixed.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch (or similar size) baking dish, spreading it evenly.

              Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden and bubbling.
