1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup long-grain rice, rinsed

2 ½ cups beef broth

1 can (14.5 oz) diced tomatoes, drained

1 cup frozen peas and carrots

2 tsp smoked paprika

1 tsp Italian seasoning

Salt and pepper to taste

2 cups shredded cheddar cheese

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Cook the Ground Beef: In a large skillet or pan over medium heat, add olive oil. Once hot, add the ground beef, breaking it apart with a wooden spoon. Season with salt and pepper. Cook until browned, about 5-7 minutes. Remove excess grease if necessary.

    Add Onions and Garlic: Add the diced onion to the pan with the browned beef. Sauté for 3-4 minutes until the onions become translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
