Ingredients

2 cups rolled oats

2 medium apples, diced (preferably Granny Smith or Honeycrisp)

1/4 cup honey or maple syrup

2 cups milk (or a non-dairy alternative)

1/4 cup almond butter (or peanut butter)

1/2 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup raisins or chopped walnuts (optional)

Fresh apple slices and cinnamon for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish or line it with parchment paper.

Prepare the Oatmeal Mixture: In a large bowl, combine the rolled oats, ground cinnamon, baking powder, and salt. Mix well to evenly distribute the dry ingredients.

Mix the Wet Ingredients: In a separate bowl, whisk together the milk, almond butter, honey or maple syrup, and vanilla extract until smooth and well combined.

Combine Ingredients: Pour the wet mixture into the dry oatmeal mixture and stir until fully incorporated. Fold in the diced apples and raisins or walnuts if using.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly. Press gently to ensure it's packed.

Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the center is set. You can test it with a fork—if it comes out clean, it’s ready!

Cool and Serve: Remove the baking dish from the oven and let it cool for about 10 minutes. If desired, top with fresh apple slices and a sprinkle of cinnamon before slicing into squares.

Enjoy: Serve warm, drizzled with additional honey or maple syrup if you like, or enjoy it cold for a refreshing breakfast option.
