2 pounds fresh ripe figs, stems removed and halved

2 cups granulated sugar

1/4 cup lemon juice (freshly squeezed)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

Prep the Figs: In a large bowl, combine the halved figs with the sugar. Toss gently to coat the figs in sugar, then let sit for about 30 minutes. This will help release the juices from the figs, creating a syrupy base for the jam.

    Cook the Mixture: Transfer the fig and sugar mixture to a medium-sized saucepan. Add the lemon juice, vanilla extract, cinnamon (if using), and a pinch of salt. Cook over medium heat, stirring occasionally, until the sugar is dissolved and the figs begin to break down, about 10–15 minutes.

      Simmer Gently: Increase the heat slightly and bring the mixture to a gentle boil. Reduce the heat to low and let it simmer for 30–40 minutes, stirring frequently to prevent sticking. The mixture should thicken, and you'll notice it becoming jam-like.

        Blend if Desired: For a smoother jam, you can use an immersion blender to blend the fig jam to your preferred consistency. If you prefer a chunkier texture, skip this step.

          Jar the Jam: Once the jam has thickened to your liking, remove it from heat. Pour the hot fig jam into clean, sterilized jars while it's still warm, leaving about 1/4 inch of headspace at the top. Seal with lids.

            Cool and Store: Allow the jars to cool at room temperature for a few hours. Once cooled, store in the refrigerator for up to 3 weeks, or process in a water bath for longer shelf storage.
