1 cup rolled oats

1/2 cup almond butter (or any nut/seed butter of choice)

1/4 cup honey or maple syrup

1/2 cup mixed nuts (almonds, walnuts, cashews), roughly chopped

1/4 cup seeds (pumpkin seeds, sunflower seeds)

1/4 cup dried fruits (raisins, cranberries, or apricots), chopped

1/4 cup dark chocolate chips or cacao nibs (optional)

1 tsp vanilla extract

Pinch of salt

Instructions
 

Prepare Your Pan: Line an 8x8-inch (or similar size) baking dish with parchment paper, allowing some overhang for easier removal.

    Mix the Wet Ingredients: In a large mixing bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

      Combine the Dry Ingredients: In a separate bowl, mix the rolled oats, chopped nuts, seeds, dried fruits, and a pinch of salt. If you’re adding chocolate chips or cacao nibs, include them in this mixture.

        Combine Everything: Pour the dry mixture into the bowl with the wet ingredients. Use a spatula or your hands to thoroughly mix everything together until all the oats and nuts are coated with the nut butter mixture.

          Press into the Pan: Transfer the mixture into the prepared baking dish. Using your hands or the back of a spatula, firmly press the mix into an even layer. Make sure it's compact so it holds together once set.

            Chill and Set: Place the dish in the refrigerator for at least 2 hours, allowing the bars to firm up.

              Slice and Serve: Once set, lift the bars out using the overhang of parchment paper. Place on a cutting board and slice into desired bar sizes.

                Storage: Store any leftovers in an airtight container in the fridge for up to a week, or freeze for longer storage.
