No-Bake S’mores Bars

2 cups graham cracker crumbs

1 cup mini marshmallows

1 cup semi-sweet chocolate chips

1/2 cup unsweetened cocoa powder

1/2 cup sugar

1/2 cup unsalted butter, melted

1 tsp vanilla extract

1/4 tsp salt

1/2 cup extra mini marshmallows for topping

Instructions
 

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, making sure to leave some overhang on the sides for easy removal later.

    Mix Dry Ingredients: In a large bowl, combine the graham cracker crumbs, cocoa powder, sugar, and salt. Mix until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted butter and vanilla extract.

        Combine Mixtures: Pour the melted butter mixture into the dry ingredients and stir to combine. The mixture should be crumbly but hold together when pressed.

          Form the Base: Take about two-thirds of the crumb mixture and firmly press it into the bottom of the prepared baking dish to create a base.

            Layer the Filling: Evenly spread the mini marshmallows and chocolate chips over the crust in the baking dish. Sprinkle the remaining crumb mixture on top.

              Add Extra Marshmallows: Scatter the extra mini marshmallows over the top layer to create a nice toasted look (upon chilling or if you decide to briefly broil them later).

                Chill: Refrigerate the bars for at least 2 hours, or until they're firm enough to cut.

                  Serve & Enjoy: Once set, carefully lift the bars out of the dish using the parchment overhang, transfer to a cutting board, and slice into squares. Serve chilled or at room temperature.
