Ingredients

1 cup creamy or crunchy peanut butter (natural is best)

1/2 cup honey or maple syrup

2 cups rolled oats

1 cup crispy rice cereal

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (almonds, walnuts, or pecans, optional)

1 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare Your Pan: Line an 8x8 inch square baking dish with parchment paper, allowing some overhang for easy removal later.

Mix Wet Ingredients: In a medium saucepan, combine the peanut butter and honey (or maple syrup) over low heat. Stir continuously until the mixture is smooth and well-combined, about 2-3 minutes. Remove from heat and stir in the vanilla extract and a pinch of salt.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, crispy rice cereal, and chopped nuts if using. Mix well to ensure an even distribution.

Combine Wet and Dry: Pour the warm peanut butter mixture over the dry ingredients. Use a spatula or wooden spoon to mix thoroughly until all the dry ingredients are evenly coated.

Transfer to Pan: Pour the mixture into the prepared baking dish. Use your hands or the back of the spatula to press the mixture firmly into the pan, ensuring an even thickness. This step helps the bars hold together.

Optional Chocolate Drizzle: If you like chocolate, melt the dark chocolate chips in the microwave in 30-second intervals, stirring in between until smooth. Drizzle or spread over the pressed mixture in the pan.

Chill: Place the pan in the refrigerator for at least 1 hour, or until the bars are fully set and firm.

Cut and Serve: Once set, remove the bars from the pan using the parchment overhang. Place on a cutting board and cut into squares or rectangles. Store in an airtight container in the fridge.
