2 cups heavy whipping cream

1 cup powdered sugar

2 teaspoons vanilla extract

1 cup strong brewed coffee, cooled to room temperature

2 tablespoons coffee liqueur (optional)

1 cup unsweetened cocoa powder, divided

1 package (14 oz) chocolate wafer cookies

1/2 cup semisweet chocolate shavings (for topping)

Coffee beans (for garnish, optional)

Prepare the Cream Mixture: In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form, about 3-5 minutes.

    Mix the Coffee: In a separate bowl, whisk together the cooled brewed coffee and coffee liqueur (if using). Set aside.

      Layer the Cake: Take a chocolate wafer cookie and quickly dip it into the coffee mixture, ensuring it’s soaked but not soggy. Layer the soaked cookie at the bottom of a 9x13 inch baking dish. Spread a layer of the whipped cream mixture over the cookie. Sprinkle a thin layer of cocoa powder on top of the cream.

        Repeat the Process: Continue layering by dipping more cookies into the coffee mixture, placing them over the whipped cream, followed by another layer of whipped cream and a sprinkle of cocoa powder. Repeat this process until you run out of cookies and cream, ending with a layer of whipped cream on top.
