1 cup graham cracker crumbs

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

1 (8 oz) package cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

Zest and juice of 2 lemons

1 cup heavy whipping cream, chilled

1 cup mixed berries (strawberries, blueberries, raspberries)

Extra berries and lemon slices for garnish

Prepare the crust: In a medium-sized mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until well combined and crumbly. Press this mixture evenly into the bottom of serving cups or small glass jars to form a crust layer. Set aside in the refrigerator to firm up while you prepare the filling.

    Make the lemon filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy. Gradually add in the powdered sugar, vanilla extract, lemon zest, and lemon juice, mixing until fully combined and smooth.

      Whip the cream: In a separate bowl, whip the chilled heavy cream until stiff peaks form. Carefully fold the whipped cream into the lemon mixture, ensuring not to deflate the whipped cream. This will give your lemon filling a light and airy texture.
