1 cup graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/3 cup granulated sugar

1/4 cup unsalted butter, melted

1 (8 oz) package cream cheese, softened

1/2 cup sweetened condensed milk

1/3 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

1/2 tsp vanilla extract

Extra shredded coconut for garnish (optional)

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Stir until well mixed and the crumbs are evenly coated.

    Shape the crust: Press the crumb mixture firmly into the bottom of an 8x8 inch (or similar size) square pan to form an even layer. Use a flat-bottomed glass or your hands to pack it tightly. Place it in the fridge to set while you prepare the filling.

      Make the filling: In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

        Blend in wet ingredients: Gradually add the sweetened condensed milk, fresh lemon juice, lemon zest, and vanilla extract. Mix until completely smooth and well combined.

          Assemble the squares: Pour the lemon filling over the chilled coconut crust, spreading it evenly with a spatula.
