No-Bake Chocolate Oat Bars

1 cup rolled oats

1 cup creamy peanut butter (or almond butter)

1/2 cup honey or maple syrup

1/2 cup cocoa powder

1/2 cup dark chocolate chips (plus extra for drizzling)

1 tsp pure vanilla extract

1/4 tsp salt

1/2 cup shredded coconut (optional)

1/2 cup chopped nuts (e.g., almonds, walnuts, or pecans) (optional)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the rolled oats, cocoa powder, and salt. Stir until well mixed.

    Melt the Sweetness: In a small saucepan over low heat, add the peanut butter and honey (or maple syrup). Stir continuously until smooth and well combined. Remove from heat.

      Mix Ingredients Together: Pour the melted peanut butter mixture over the dry ingredient bowl. Add the vanilla extract and stir until everything is well combined. If you're adding shredded coconut and chopped nuts, fold them in at this stage.

        Add Chocolate Chips: Gently stir in the dark chocolate chips, reserving a few for later drizzling if desired.

          Press into the Pan: Line a square baking pan (8x8 inches) with parchment paper, leaving a bit of overhang for easy removal. Pour the mixture into the pan, pressing it down evenly with the back of a spatula or your hands until it is well compressed.

            Chill: Place the pan in the refrigerator for about 1-2 hours, or until the mixture is firm and set.

              Slice and Drizzle: Once set, remove the bars from the pan using the parchment paper overhang. Place on a cutting board and slice into squares or rectangles. If you reserved chocolate chips, melt them if desired and drizzle over the bars for an extra touch of decadence.

                Serve and Enjoy: These bars can be stored in an airtight container in the refrigerator for up to a week. Enjoy them as a quick snack or a delightful dessert!
