No-Bake Carrot Cake Energy Balls

1 cup rolled oats

1 cup finely shredded carrots (about 2 medium carrots)

1/2 cup almond or peanut butter (smooth)

1/4 cup honey or maple syrup

1/4 cup shredded coconut (unsweetened)

1/4 cup chopped walnuts or pecans

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 cup raisins (optional)

1/4 cup mini chocolate chips (optional)

Instructions
 

Prep the Ingredients: Start by finely shredding the carrots using a grater or food processor. Measure out all your ingredients to have them ready for easy mixing.

    Combine Dry Ingredients: In a large bowl, mix together the rolled oats, shredded coconut, chopped walnuts or pecans, ground cinnamon, ground nutmeg, and salt until well combined.

      Mix in Wet Ingredients: In a separate bowl, combine the almond or peanut butter, honey or maple syrup, and vanilla extract. Stir until the mixture is smooth and well-blended.

        Combine and Fold: Pour the wet ingredients into the bowl with the dry ingredients. Add in the shredded carrots and optional raisins and chocolate chips if using. Using your hands or a spatula, mix everything together until fully combined. It should be sticky and hold together well.

          Form the Balls: Once the mixture is well blended, take about a tablespoon of the mixture and roll it into a ball shape with your hands. Repeat this process until all the mixture is formed into balls. You should have about 20-24 energy balls.
