Ingredients

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

1 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 1/2 cups fresh blueberries

2 tablespoons lemon juice

Zest of 1 lemon

Optional: mint leaves for garnish

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are well-coated with butter. Divide the mixture evenly among 4 serving cups and press down firmly to create an even layer to form the crust.

Make the Cheesecake Filling: In another bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually sift in the powdered sugar, mixing on low speed until combined. Add the vanilla extract and beat until fluffy.

Whip the Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Be careful not to deflate the whipped cream.

Prepare the Blueberry Topping: In a small saucepan over medium heat, combine the blueberries, lemon juice, and lemon zest. Cook until the blueberries start to soften and release their juices, about 5-7 minutes. Remove from heat and let it cool to room temperature.

Assemble the Cups: Spoon the cheesecake filling over the prepared crust in each cup until filled to your liking. Top each cup with a generous spoonful of the blueberry mixture.

Chill: Cover the cups with plastic wrap and refrigerate for at least 3 hours, or until ready to serve. This will help the cheesecake set and the flavors to meld beautifully.

Serve: Optionally, garnish with fresh mint leaves before serving. Enjoy your refreshing, no-bake blueberry cheesecake cups!
