4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or yellow), sliced

1 zucchini, sliced

1 can (14.5 oz) diced tomatoes (with Italian herbs)

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 cup fresh spinach

½ cup mozzarella cheese, shredded

Fresh basil leaves for garnish

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Heat the Skillet: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken breasts and sear for about 5-7 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F). Remove chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes. Next, add the sliced bell pepper and zucchini, cooking for another 5 minutes until they soften.

        Add Tomatoes and Herbs: Pour in the diced tomatoes along with their juices. Stir in the oregano, basil, and red pepper flakes (if using). Let it simmer for about 5 minutes, allowing the flavors to meld together.

          Combine Chicken and Spinach: Return the chicken to the skillet, nestling it amongst the vegetables. Add the fresh spinach, letting it wilt into the sauce for about 2 minutes.

            Melt the Cheese: Sprinkle mozzarella cheese over the chicken and vegetables. Cover the skillet and allow the cheese to melt for about 3 minutes.
