Mushroom Swiss Burger Casserole

1 lb ground beef (80/20 blend)

1 medium onion, diced

3 cups sliced mushrooms (button or cremini)

3 cloves garlic, minced

1 teaspoon Worcestershire sauce

1 teaspoon soy sauce

1 teaspoon Dijon mustard

Salt and pepper, to taste

4 cups baby spinach

8 slices Swiss cheese

1 lb frozen hash brown potatoes (shredded)

4 large eggs

1 cup milk

1/2 cup mayonnaise

1 cup grated Swiss cheese (for topping)

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13-inch casserole dish with cooking spray or butter.

    Cook the beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess fat.

      Add vegetables: Add the diced onion and sliced mushrooms to the skillet. Cook until they are softened (about 5 minutes). Stir in the minced garlic, Worcestershire sauce, soy sauce, Dijon mustard, salt, and pepper. Cook for an additional minute, then remove from heat.

        Layer spinach: Add the baby spinach to the mixture in the skillet. Stir until wilted, then set aside to cool slightly.

          Assemble the casserole: Spread the frozen hash browns evenly in the bottom of the greased casserole dish. Layer the beef and mushroom mixture over the hash browns. Arrange the 8 slices of Swiss cheese on top of the beef mixture.

            Prepare egg mixture: In a separate bowl, whisk together the eggs, milk, and mayonnaise. Pour this mixture evenly over the layers in the casserole dish.

              Add final topping: Sprinkle the grated Swiss cheese over the top of the casserole.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for another 15-20 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and serve: Once done, let the casserole cool for 5-10 minutes before slicing. Garnish with chopped fresh parsley and serve warm.
