Mushroom and Spinach Quesadillas for Kids

Ingredients
  

1 cup fresh spinach, chopped

1 cup mushrooms, diced

1 cup shredded mozzarella cheese

4 whole-wheat tortillas

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Optional: salsa or sour cream for dipping

Instructions
 

Sauté the Vegetables: Heat the olive oil in a skillet over medium heat. Add the diced mushrooms and sauté for about 3-4 minutes, until they are soft and golden.

    Add Spinach: Stir in the chopped spinach, garlic powder, onion powder, salt, and pepper. Cook for another 2 minutes, until the spinach is wilted. Remove the skillet from heat and let the mixture cool slightly.

      Prepare the Quesadillas: Lay out two tortillas on a clean surface. Evenly distribute the sautéed mushroom and spinach mixture onto each tortilla, topping them with shredded mozzarella cheese.

        Assemble: Place the remaining tortillas on top of the filling. Press down gently to help hold everything together.

          Cook the Quesadillas: Heat the skillet over medium-low heat. Carefully transfer one quesadilla to the skillet. Cook for about 3-4 minutes until the bottom is golden brown and the cheese is starting to melt. Carefully flip the quesadilla using a spatula, and cook the other side for an additional 3-4 minutes.

            Repeat: Repeat the cooking process with the second quesadilla.

              Slice and Serve: Once both quesadillas are done, remove them from the skillet and let them cool for a minute. Slice into wedges and serve with salsa or sour cream for dipping, if desired.
