Mushroom and Spinach Lasagna Rolls

9 lasagna noodles

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (cremini or button)

4 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and black pepper, to taste

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 jar (24 oz) marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Lasagna Noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a kitchen towel to prevent sticking.

      Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking for an additional 5-7 minutes until the mushrooms are softened.

        Add Spinach and Seasonings: Stir in the fresh spinach and cook until wilted. Season the mixture with dried oregano, dried thyme, salt, and pepper to taste. Remove from heat and let cool slightly.

          Mix the Filling Ingredients: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese (¾ cup), and half of the Parmesan cheese (¼ cup) with the sautéed vegetable mixture. Mix well until everything is evenly incorporated.

            Assemble the Lasagna Rolls: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13-inch baking dish. Take a cooked lasagna noodle and spoon about 2-3 tablespoons of the filling along one end. Roll the noodle tightly around the filling and place it seam-side down in the baking dish. Repeat this process with the remaining noodles and filling.

              Add Sauce and Cheese Topping: Once all rolls are assembled, pour the remaining marinara sauce over the top of the rolls. Sprinkle the remaining mozzarella (¾ cup) and Parmesan cheese (¼ cup) evenly over the sauce.

                Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

                  Serve: Remove from the oven, let cool for a few minutes, and garnish with fresh basil leaves if desired. Slice and serve warm.
